Ingredients
• eggplant, cut about an inch
• 2 eggs, for dredging
• 1 cup Italian seasoning
• 1 tbsp fresh grated parm cheese
• 1 tsp red pepper flakes
Layers:
• fresh tomato, sliced
• sautéed portabelo mushrooms
• mozzarella cheese, broiled on sandwich
• arugula
• balsamic glaze drizzle
• olive/pepper/cheese skewer to top (optional)
Instructions
Layer as listed above. When you arrange your cheese broil it until golden and bubbly, then finish layering. Enjoy!
