From Scratch Game Day Pretzel Bites
These delicious homemade soft pretzel bites recipe is easy to make in about 1 hour with ingredients you likely already have on hand. Perfect if you’re hosting a gathering for Super Bowl + pairs so well with these dips:
-beer cheese dip
-mustard dip
-caramel dip (trust me)
Ingredients
1 1/2 cups warm water
1 tbsp brown sugar
1 package active dry yeast
4 1/2 cups all-purpose flour
2 tbsp butter
1 tsp salt
9 cups water
1/3 cup baking soda
1 large egg + 1 tbsp water, for brushing
Flaky salt, for topping
Instructions
1. Whisk together the warm milk + sugar in a stand mixer (or large mixing bowl). Sprinkle in the yeast and let sit 5 minutes for it to foam up. Then add the flour, melted butter and salt. I use my stand mixer to bring the dough together and once combined I knead with my hands. If you aren’t using a stand mixer use a wooden spoon to mix and then your hands to knead the dough. Once dough is smooth and not sticky (add more flour if it is sticky) then you can cover and let sit to rise for 20 minutes.
2. Preheat oven to 450F and line two baking sheets with parchment paper. Combine the water + baking soda in a pot and bring to a boil over medium-high heat.
3. Turn the dough out onto a lightly-oiled surface and divide into 3/4-inch wide ropes. Use a knife to cut the rope into individual pretzel bites, about 1-inch long each.
4. Use a spatula (or even better a spider strainer) to transfer the bites into the boiling water, about a dozen at a time, for about 30 seconds per batch. Transfer the pretzel bites to the parchment-lined pan, spaced out so that they’re not touching, and repeat with the remaining pretzel bites.
Add egg wash + salt. Brush the top of each pretzel bite with the egg wash and sprinkle with the flaky salt.
5. Bake until the pretzel bites reach your desired level of golden brown color, about 12ish minutes. Transfer to a wire cooling rack and brush with more melted butter + sprinkle flaky salt. Enjoy!
