Glazed Lemon Poppyseed Muffins

Ingredients

Lemon Poppyseed Muffins:
2 cups all-purpose flour
3/4 cup granulated sugar
2 tbsp poppy seeds
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp fine salt
1 cup whole milk, at room temperature
1 stick unsalted butter, melted and cooled
1 large egg, at room temperature
2 tbsp fresh lemon juice
1 1/2 tbsp fresh lemon zest

For the lemon glaze:
1 cup powdered sugar
2 tbsp fresh lemon juice


Instructions

Instructions:
Preheat the oven to 400°F. Line muffin tin with paper liners.
In a large bowl, whisk together the flour, sugar, poppy seeds, baking powder, baking soda, and salt. In a small bowl, whisk together the milk, butter, egg, juice, and zest. Pour into the dry ingredients and stir until just combined. Do not overmix. Divide evenly among the muffin tin cups. Bake about 15 minutes. Let cool until barely warm. Serve, or store in an airtight at room temperature for 3 days (or freeze for a few months!).
