Something fun! Very literal Apple Pie Cookies. These are so fun to make + are the PERFECT bite of gooey apple pie.
Ingredients
* 2 tbsp butter
* 5 cups peeled, cored and cubed
* ¾ cup brown sugar, packed
* ¼ cup granulated sugar
* 1 tsp ground cinnamon
* ½ tsp apple pie spice
* ⅛ tsp salt
* 6 tbsp cornstarch, or more as needed
* 2 ½ cups water
* 2 tsp apple cider vinegar
* 2 pie crust, one as is and the other sliced into strips
Instructions
Add butter and apples to skillet over medium heat. Toss until apples are coated with melted butter. Stir in both sugars, spices and salt. Bring to a simmer, then cook until apples are starting to soften, about 4-5 minutes. In the meantime, combine water, cornstarch and apple cider vinegar in a measuring jug until no lumps remain. Pour mixture over the softened apples and carefully stir. Bring to a simmer, then simmer until filling has thickened and apples are tender. Cool completely. Now lay out your pie crust and transfer cooled apple pie filling onto it. Make it a thin layer. Top it with your criss-cross pie crust strips. Use a cup or cookie cutter to get perfectly circled cookies. Bake at 350f for 20 minutes or until golden brown. Enjoy!
