This bite-sized Reuben Roll-Ups appetizer recipe is made with corned beef, sauerkraut, Swiss cheese, and Thousand Island dressing, all rolled up in a crispy egg roll wrapper. They are perfect for game day celebrations, family gatherings, or just a weekend at home.

If you’re following me on Instagram, you know that my Super Bowl Series is full of easy appetizer recipes. I love getting creative with classics and finding different ways to make them, especially when you can cut down on time and mess.

These Reuben Roll-Ups are my husband’s favorite and we ate all of these up! I don’t think they even lasted an hour. They’re such an easy appetizer and perfect for serving a crowd. So, whether you’re hosting game day or movie night, having a dinner party, or simply need some finger foods to serve, this is a great recipe to break out.

This appetizer is a twist on a classic Reuben Sandwich, which is a popular hot sandwich traditionally made with corned beef, Swiss cheese, sauerkraut, and Thousand Island dressing, served on rye bread. It is typically grilled or toasted until the cheese is melted and the bread is crisp.

For these Reuben Roll-Ups, I used egg roll wrappers and stuffed them with the same ingredients in a traditional Reuben sandwich. You could even use crescent roll dough or puff pastry and do something similar, but the egg roll wrappers give such a beautiful crunch! If you can’t find egg roll wrappers, give wonton wrappers a try.

I find these roll-ups to be such a classic comfort food and creating it in this way is not only such a fun option, but also allows for much easier eating and clean-up.

How to Make the Best Reuben Roll-Ups

As with any recipe, you can modify things to fit your taste. Variations of a traditional Reuben sandwich include pastrami instead of corned beef, different types of cheese, or variations of the dressing. So, you can definitely do the same thing with these Reuben Roll-Ups.

However, I think the dressing is part of what makes the Reuben so classic. The Thousand Island dressing is a creamy salad dressing that is made with a base of mayonnaise, ketchup, and sweet pickle relish, along with other seasonings such as garlic, onion, and paprika.

It adds a wonderful burst of flavor to the other ingredients in this recipe, so I recommend sticking to this dressing! You can usually find this in your local grocery store near other condiments. Kraft and Wish-Bone both have great options for you to use in this recipe (and others!). 

Thousand Island dressing is commonly used as a dressing for salads and sandwiches, but it can also be used as a dipping sauce for vegetables or as a condiment for burgers or other grilled meats.

So, you can pair these Reuben Roll-Ups with fresh or grilled vegetables or a side salad and make a quick meal out of it! The dressing can serve as a great dip for the roll-ups and also be used to make any veggies more palatable and tie together the meal.

If you want to make these healthier, you could easily airfry the roll-ups as well, rather than shallow fry them in a pan. If you do this, I recommend coating each roll-up in a little oil before air frying.

I find pan frying these to be the best way to get the perfect crisp on each roll – and it’s easier than you think. I use the Our Place Always Pan with the Fry Deck add-on. This add on is heaven-sent in recipes like this because it allows for such a clean and seamless frying process. It drip dries each roll over your cookware, so you don’t end up with overly greasy rolls and don’t need to waste paper towels as you cook.

However you choose to serve your Reuben Roll-Ups, this appetizer is so unbelievably quick and easy to prepare. You can have it ready in under an hour! The best part is your guests will probably devour each and every one of these delicious roll-ups, so clean-up will likely be a breeze.

Reuben Roll-Ups

Ingredients

Scale
  • egg roll wrappers
  • 1/2 lb deli-sliced corned beef
  • 5 slices of Swiss cheese
  • 1/2 cup sauerkraut drained and squeezed
  • 1 egg white
  • About 5 cups of oil for frying
  • Thousand Island dressing to dip

Instructions

  1. Preheat oil to 350 degrees. 
  2. Dice corned beef and Swiss cheese – add sauerkraut and mix! 
  3. Add about 2 tablespoons of Reuben filling in the middle, leaving space on each side. 
  4. Gently fold the corner that’s closest to you over the filling mixture, and tuck under the filling. Fold both side corners toward center of wrapper, it will start to look like an open envelope. 
  5. Dip your fingers in egg white and run it along the edges of the wrapper to seal better. Carefully roll up the egg roll. 
  6. Cook roll-ups in batches until golden brown and serve with thousands island dressings for dipping. Enjoy!
