Christmas Light Cookies

Ingredients

Scale

¾ cup flour, plus extra for rolling
1/2 tsp baking powder
pinch of salt

¼ cup unsalted butter, softened
¼ cup sugar
1 egg yolk
1/2 tsp vanilla
1/4 tsp almond extract

For cream cheese icing:
2 cups powdered sugar
2 teaspoons fresh lemon juice
2 tsp vanilla extract
8oz cream cheese, softened

For decorating:
1 small tube of black gel icing
mini M&Ms


Instructions

In a small bowl, whisk together the flour, baking powder and salt. In a medium bowl, beat together the butter and sugar – then add the egg yolk, vanilla and almond extracts. bring together the mixtures and then transfer dough to floured surface. Flour your rolling pin and roll out the dough – cut out your rounds, trees or whatever shape you like and place on a baking sheet lined with parchment paper or a silicone mat. Gather the dough scraps and re-roll to cut out more shapes until gone. Place the cookie sheet in the freezer while you preheat the oven to 350. Bake the cookies for 12 minutes. Let them sit on the sheet a few minutes before moving them a wire rack to cool completely. make your icing, place on top of the cookies and pop back in the fridge for another 5-10 minutes. Remove and use your black gel + m&ms to create lights!
