Creamy Homemade Tomato Soup

Ingredients

Scale

3 lbs tomatoes, fresh and quartered

1/2 onion diced

5 garlics cloves, chopped

olive oil, generous amount

1/2 tsp of salt

1/2 tsp pepper

1/4 cup fresh basil

2 tbsp salted butter

2 tbsp all-purpose flour

1 tbsp sugar

1 cup vegetable broth (or more if you desire a less creamy consistency)

1/4 cup heavy cream


Instructions

  1. Preheat oven to 450f.
  2. Line baking sheet with parchment paper and transfer your tomatoes, onion, and garlic. Toss with olive oil, salt and pepper until evenly distributed.
  3. Bake for 15 minutes. Remove from oven, stir, and roast for an additional 15 minutes, broiling during the last 3 minutes so that some of the
    tomatoes get lightly charred.
  4. Add mixture and fresh basil to high-powered blender, I use a vitamix!
  5. Once fully blended transfer to pot over medium heat and add butter, veggie broth, flour, sugar (optional) and heavy creamy (optional). Mix until fully incorporated.
  6. Serve and enjoy!
