Made with shredded chicken, salsa, and warm spices, and topped with crispy tortilla strips, this delicious Chicken Tortilla Soup is a super simple weeknight dinner recipe that is perfect for the colder months.

Don’t tell my other soups, but I think I have a new favorite soup recipe 🤫This Chicken Tortilla Soup is a delicious dish with warm, Mexican-inspired flavors. Not only is it a super simple weeknight dinner recipe that is hearty, comforting, and filling, but you can make it your own in so many different ways!

For instance, my recipe includes shredded chicken, tomatoes, salsa verde, and spices. However, you could add beans, corn, or avocado. You can also easily substitute the chicken for tofu or your favorite canned beans for a vegetarian tortilla soup.

I used a mix of different tomatoes and warm spices to get a good, hearty, and nutritious soup base with a kick: canned tomatoes, plum tomatoes, salsa verde, cayenne pepper, and more.

The tomato base creates such a comforting dish and if you’re in need of a cozy meal, this soup is the perfect recipe. The best part is that you can freeze your soup in an airtight container for up to two months!

So, you can meal-prep for the winter months and thaw your soup in the fridge overnight when you’re ready to serve. Then, you can simply reheat your Tortilla Soup by bringing it to a boil in a saucepan.

Another reason I love soup recipes is you can pretty much always make them in one pot. Whether you use a Dutch oven, an Instant Pot, or something else, soups make for easy clean-up at the end of cooking.

How to Make the Best Tortilla Soup

Of course, the star of the show is the protein you choose. For the Chicken Tortilla Soup, I grab a rotisserie chicken from my local grocery store! However, this is also a great recipe to make if you have leftover chicken (breasts, rotisserie, etc.)!

Again, you can substitute chicken for any other protein of your choice as well to meet your dietary preferences or needs. 

The other important ingredient in this soup is broth. Low-sodium bone broth, chicken broth, or vegetable broth are all great options for this recipe. I used vegetable broth, but bone broth also offers a ton of nutritional value!

With a Mexican-inspired soup like this one, you’ll want to adjust the spice level to your preference. Traditional tortilla soups are made with a bit of a kick! For me, the warm spices and salsa verde add the perfect amount of heat. However, if you want to turn the spice up a bit, add some jalapeños in after cooking! 

This Chicken Tortilla Soup is heavenly on it its own, but if you want to elevate both the presentation and flavor, it’s all about the toppings. I usually stick to shredded cheese and tortilla strips as a garnish, but you can also use cilantro, sour cream, avocado, lime wedges, jalapeño, and more. Get creative with it!

And lastly, those crispy tortilla strips. These bring the best texture to the Chicken Tortilla Soup, so I highly recommend that you don’t omit these! With the shredded chicken and tomato base, they bring an addictive, toasted crunch.

Fresh Gourmet and Target’s Good & Gather have great options for crispy tortilla strips. However, you can also easily make your own homemade tortilla strips out of corn tortillas. 

Simply cut corn tortillas into thin strips and fry them in oil over medium-high heat on a pan, or you can even coat them in oil and bake them on a cookie sheet at 350ºF for 15 minutes.

Chicken Tortilla Soup

  • 1 ½ cups shredded cooked chicken, I just buy a rotisserie from the store!
  • 4 cups vegetable broth
  • 1 (28 oz) can whole peeled tomatoes
  • 1 jar salsa verde, whatever your favorite brand is
  • 2 roma (plum) tomatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • ½ tsp cayenne pepper
  • ½ tsp ground cumin
  • salt + pepper to taste
  • ½ tsp dried cilantro
  • 1 cup shredded Pepper Jack cheese


  1. In a large pot over medium heat, combine chicken, broth, canned tomatoes, green chiles, fresh tomatoes, onion, garlic, and lime juice. 
  2. Season with cayenne, cumin, salt, and pepper. 
  3. Bring to a boil, reduce heat, and simmer for 15 to 20 minutes. Stir in cilantro, and simmer for another 15 to 20 minutes, until slightly thickened. 
  4. Spoon into serving bowls, and top with shredded cheese + tortilla strips.
  5. Enjoy!
