Chicken Tortilla Soup

Ingredients

  • 1 ½ cups shredded cooked chicken, I just buy a rotisserie from the store!
  • 4 cups vegetable broth
  • 1 (28 oz) can whole peeled tomatoes
  • 1 jar salsa verde, whatever your favorite brand is
  • 2 roma (plum) tomatoes, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • ½ tsp cayenne pepper
  • ½ tsp ground cumin
  • salt + pepper to taste
  • ½ tsp dried cilantro
  • 1 cup shredded Pepper Jack cheese

Instructions

  1. In a large pot over medium heat, combine chicken, broth, canned tomatoes, green chiles, fresh tomatoes, onion, garlic, and lime juice. 
  2. Season with cayenne, cumin, salt, and pepper. 
  3. Bring to a boil, reduce heat, and simmer for 15 to 20 minutes. Stir in cilantro, and simmer for another 15 to 20 minutes, until slightly thickened. 
  4. Spoon into serving bowls, and top with shredded cheese + tortilla strips.
  5. Enjoy!
