This Pumpkin French Toast recipe is hands-down the best french toast I’ve ever had. Made with seasonal pumpkin puree, warm fall spices, and soft brioche bread, this simple breakfast recipe is guaranteed to satisfy your taste buds.

Nothing says ‘fall’ quite like the delicious aromas of spices like cinnamon, maple, nutmeg, and of course, pumpkin. Pumpkin French Toast is a delicious and seasonal twist on a classic breakfast dish. It’s perfect for fall mornings and is sure to warm you up on a chilly day.

On those days you want a warming, sweet start to your day, this is the recipe you want to reach for. The best part is that this recipe is extremely easy and quick to make, so you won’t be standing around in the kitchen for hours in the morning.

How to Make the Best Pumpkin French Toast

The combination of pumpkin and spices gives this french toast recipe a unique and delicious taste. This twist on a classic breakfast recipe is so fun and can help mix things up during the fall. 

With so few ingredients, making the best french toast comes down to picking the right bread and being patient with the cooking process.

French toast is best made with thick slices of bread, such as challah, brioche, or Texas toast. I use brioche in this Pumpkin French Toast recipe. Overall, these types of bread are denser and hold up better when soaked in the egg mixture.

You also want to be sure to cook on medium-low heat. Once you smell these ingredients, you’re going to want to scramble through to get a taste of this goodness, but I promise it’s worth it to be a little patient!

You don’t want your french toast to brown too quickly and allow the egg to cook through. That will be the difference between having an eggy french toast versus one that toasts up to a nice golden brown and soaks in the flavors of your puree mix. 

There are also so many ways to dress it up and make it even more fun! For some extra flavor and texture, you can top your Pumpkin French Toast with a number of different things.

I love using pumpkin-flavored Siggis Greek yogurt, a dash of cinnamon, and a drizzle of maple syrup for topping.

If you want to get fancy, you could sprinkle some powdered sugar or top it with grilled fruit, such as apples or peaches. Of course, you could always go the classic route of adding some whipped cream, nuts, or fresh fruit on top.

Pumpkin French Toast

Ingredients

Scale
  • ½ cup organic pumpkin puree
  • 4 large pasture-raised eggs, whisked
  • ⅔ cup milk, whatever you drink
  • 1 tsp vanilla extract
  • 1 tbsp pure maple syrup
  • 1 tsp ground cinnamon
  • ¼ tsp nutmeg
  • thick-cut bread, I used Brioche
  • oil or cooking spray for greasing the pan

Instructions

  1. Add all the ingredients (except the bread) to a shallow dish. Whisk until smooth. 
  2. Oil and heat a frying pan to low-medium heat. 
  3. Dunk a piece of bread in the French toast mixture, covering each side. Shake off any excess batter. 
  4. Cook for 2-4 minutes on each side. 
  5. Serve immediately with whatever you like and enjoy!
