I love to eat as many colors as possible and with fresh, local ingredients, this salad will have you feeling light and nourished. It’s one of those meals that make you smile from the inside out.
Not to mention, it is loaded with healthy ingredients. Couscous provides more protein, vitamins, and minerals than the equivalent portion of white rice. It’s also a wonderful source of fiber, which will help you feel full for longer, stabilize blood sugar levels, and aid in digestion.
With all the other garden-fresh ingredients in this recipe, you are guaranteed to get all five food groups in your system with this dish. And the best part is, it will be a hit no matter when, where, or for whom you make it, I promise!
You can pair this Greek Couscous Salad with any vinaigrette or salad dressing of your choice, but I have to say making your own homemade dressing is super fun.
To make the salad dressing, simply combine all the dressing ingredients (listed below) in a glass jar with a lid or a mason jar, and simply shake until it is well combined. You can also put all of the ingredients in a food processor and blend for a few minutes, allowing enough time to let the oil fully emulsify.
What’s amazing about this Greek Couscous Salad recipe is that in addition to it being colorful and bursting with flavors and textures, you can easily use it as a meal-prep recipe or make it ahead of time to make your life easier.
As long as you store the couscous mix and the salad dressing in separate containers, it would be easy-peasy. Plus, with mini salad dressing containers, you could make this Greek salad on the go, which would be perfect for workday lunches, road trip healthy meals, and more.
How to Make this Greek Couscous Salad Your Own
To be honest, I came up with this recipe by randomly throwing together all the different veggies from our garden with some chickpeas and adding pearled couscous. All to say, this recipe is full of endless possibilities to make your own.
If you don’t have pearl couscous, you could easily substitute it for pasta, quinoa, or rice. If you want to keep it super healthy, whole-grain pasta, plant-based pasta (like Banza), quinoa and wild rice mixes, and/or brown rice are all great options. You can seriously never go wrong!
You can also add kalamata olives and swap the cheese curds for feta cheese to make an even more authentic Greek salad dish.
If you want a crunch, you can roast your chickpeas (add in your favorite seasonings or just some freshly cracked salt and pepper!), or instead, add some pine nuts.
For more protein (in addition to the chickpeas), you could add beans, lentils, or some lemon chicken. You could even go Chipotle-style and make this for a larger party by separating out all your ingredients and letting them choose how to make their couscous bowls! Like I said, endless possibilities.
