Spring Fruit Sugar Cookies

Sugar Cookies:

1 cup salted butter cut into cubes

1 cup granulated sugar

1 egg

1/2 tsp vanilla extract

2 tsp baking powder

3 cups all purpose flour, incorporate slowly

For the Cream Cheese Frosting:

1/2 cup salted butter (one stick) at room temperature

8 oz cream cheese (one package) at room temperature

34 cups powdered sugar

1 tsp vanilla extract

fresh fruit: strawberry, kiwi, mandarin oranges, and blackberries for topping


1. Preheat oven to 350 degrees.
2. In a large bowl, stir butter and sugar until well mixed. Add the egg, vanilla extract and almond extract and stir again. Slowly incorporate the flour and baking powder until a dough forms.
3. Scoop and roll into 3 tablespoon dough balls (large cookie scoop) and press with a glass to spread a bit. Refrigerate 5 minutes before baking to help them hold their shape.
4. Bake 8-10 minutes, then let cool.
5. Frost cooled cookies with frosting made while cookies were baking. Top with the fresh fruit and enjoy!
