Pumpkin S’mores Cookies

-1 Cup unsalted butter softened
-3/4 Cup brown sugar packed
-1/4 Cup granulated sugar
-1/2 Cup organic pumpkin puree
-1 egg, large
-1 Tsp vanilla extract
-2 1/4 Cups all purpose flour
-1 Tsp baking soda
-1 Tsp cinnamon
-1/2 Tsp salt
-1 Cup chocolate chunks
-1 Cup mini marshmallows
-about 5-7 graham crackers broken into small pieces


Preheat oven 350f and line baking sheets with parchment paper. Cream together the butter & sugars until fluffy. Then add in the pumpkin, egg and vanilla extract. Mix together dry ingredients separately then bring together with the wet. Fold and do not over-mix. Lightly fold in chocolate chunks, marshmallows and Graham crackers. Scoop out cookie dough balls about 1/2 inch in size and top each cookie with more chunks & marshmallows. Bake for 12 minutes or until golden brown. Allow cookie to cool before removing from pan. Enjoy!
