French Toast Muffins

French Toast Muffins:
1/2 loaf bread, cut into chunks
4 eggs
1 1/2 cups milk
4 tbsp sugar (divided in half)
1 tsp vanilla extract
1 tsp ground cinnamon

Toppings:
Cinnamon + sugar, before you bake
Powdered sugar, after you bake


Instructions

  1. chop up the bread into bite sized pieces
  2. spray muffin tin
  3. in a large bowl, mix together half the sugar, milk, eggs and extract
  4. mix the bread into the bowl
  5. in a separate bowl add 2 tbsp sugar and 1 tsp cinnamon. mix well!
  6. spoon half the wet bread into the muffin cups and top with 1/2 tsp of the cinnamon sugar mix then add the remaining wet bread and sprinkle again with the cinnamon sugar mixture
  7. bake at 350 f for 15-20 minutes or until golden brown
  8. serve with syrup and butter!
