Summer Burrata Salad

2 cups cherry tomatoes

2 peaches, wedged

1 cup cherries, pitted

8 ounces burrata cheese

seeds and herbs of choosing!


½ cup mayo

3 Tablespoons vinegar

2 Tablespoons honey

2 Tablespoons granulated sugar

1 Tablespoon poppy seeds


To make the vinaigrette: combine all ingredients and whisk until smooth


2. for the salad – in a large bowl toss the tomatoes, peaches, and cherries with 1/3 of the dressing


3. Break the balls of burrata around the salad. Drizzle with the remaining vinaigrette and olive oil then top with seed and herb of choice. Serve with grilled pita bread, crackers or toasted bread.
