Strawberry Coconut Milk Popsicles

  • Author: Garianne Gagliardi

Ingredients

Scale
  • 5 cups ripe strawberries (you can use frozen too if you don’t have fresh on hand)
  • 1 cup full-fat coconut milk
  • 2 tbsp lime juice
  • 2 tbsp maple syrup

Instructions

Add everything to a high-speed blender and blend until smooth and creamy. Give it a taste and add a little more maple syrup if you want it sweeter.

Pour the mixture into popsicle molds, tapping the molds gently on the counter to release any air bubbles. Add the lid and place the popsicle sticks in the center.

Freeze for 3–4 hours, or until fully set. If you’re using fresh strawberries instead of frozen, they’ll need closer to 5–6 hours.

Enjoy!
