- 1 ½ lbs cucumbers
- ⅓ cup fresh dill, chopped
- 1 garlic clove, minced
- ½ tsp sea salt
- ½ tsp pepper
- 1 ½ tbsp lemon juice
- 2 tbsp olive oil
Instructions
- Using a mandolin, slice the cucumbers. You can also cut the cucumbers thin with a knife if you don’t have a mandolin.
- Place the cucumbers into a mixing bowl.
- Sprinkle the fresh lemon thyme (or dill!), minced garlic, lemon juice, olive oil, salt, and pepper on top and mix well.
- Serve fresh and enjoy!
