Meal Prep Salad Jars

Does anyone else have a meal they struggle with the most? Mine has always been lunch – for a few reasons:

* it’s in the middle of the day, typically when I’m at my busiest
* I never know what to eat
* I feel like I have no time to make something

So meal prep has always been beneficial for me when it comes to lunch. These simple salad jars are are my favorite and so easy to make, versatile + keep you full!




3/4 cup dressing of choice (I use red wine vinaigrette)
1/4 cup red onion, minced
1 cucumber, diced
3 peppers, chopped
1 can chickpeas, drain/rinsed/roasted
Iceberg lettuce, chopped


Remove chickpeas from the can, rinse and season with whatever you like. Drizzle with olive oil and bake at 400f for about 10-15 minutes. While waiting, chop your veggies and begin the layering process. You want to start with your dressing first so nothing becomes soggy! Enjoy.
