Lemon Blueberry Almond Loaf

Welcoming all the spring things with this beautiful & delicious Blueberry Lemon Loaf!




1 cup sugar
1 tbsp lemon zest
1.5 tbsp fresh lemon juice
1 tsp vanilla extract
1 stick butter, room temp
3 eggs
1/2 cup all purpose flour
1 cup almond flour
1/2 tsp baking powder
1 cup blueberries

For Glaze:
confectioners sugar
fresh lemon juice


Heat oven 350F. Line loaf pan with butter & parchment paper. In a medium bowl whisk together sugar, lemon zest/juice, butter and vanilla extract. Next add the eggs then flour & baking powder. Fold in blueberries, but save some for the top! Transfer to loaf dish, add your leftover blueberries and pop into the oven for about an hour! Let loaf fully cool before lathering with glaze. Enjoy
