Grilled Jamaican Jerk Chicken

Ingredients

  • 34 lb whole chicken
  • 1 tbsp olive oil
  • 4 garlic cloves, minced (or 1 tbsp garlic powder)
  • 1 shallot, chopped (or 1 tbsp onion powder)
  • 1 tbsp dried parsley
  • 1 tbsp brown sugar
  • 2 tsp smoked paprika
  • 2 tsp salt
  • 1 tsp ground thyme
  • 1 tsp ground allspice
  • 1/2 tsp cayenne pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 1/4 tsp red pepper flakes
  • lots of fresh cilantro

Instructions

  1. Make sure the cavity of the chicken is empty and dab the skin dry. 
  2. Rub the skin with olive oil and generously coat with seasoning. 
  3. Place the chicken breast-side down onto the grill, cook for about 15 minutes, flip the chicken over and cook for 20-30 minutes or until a thermometer reaches 165F. 
  4. Remove and rest 10 minutes before cutting!
