- 3–4 lb whole chicken
- 1 tbsp olive oil
- 4 garlic cloves, minced (or 1 tbsp garlic powder)
- 1 shallot, chopped (or 1 tbsp onion powder)
- 1 tbsp dried parsley
- 1 tbsp brown sugar
- 2 tsp smoked paprika
- 2 tsp salt
- 1 tsp ground thyme
- 1 tsp ground allspice
- 1/2 tsp cayenne pepper
- 1/2 tsp ground cumin
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cinnamon
- 1/4 tsp red pepper flakes
- lots of fresh cilantro
Instructions
- Make sure the cavity of the chicken is empty and dab the skin dry.
- Rub the skin with olive oil and generously coat with seasoning.
- Place the chicken breast-side down onto the grill, cook for about 15 minutes, flip the chicken over and cook for 20-30 minutes or until a thermometer reaches 165F.
- Remove and rest 10 minutes before cutting!
