Chicken Piccata

Homemade Chicken Piccata:
1. season thinly sliced pounded chicken breast with salt + pepper and then coat in flour
2. add olive oil + 2 tbsp of butter to a skillet over medium heat
3. cook chicken for about 5 minutes on both sides or until golden brown – remove
4. add one chopped onion + 2 minced garlic cloves
5. once translucent add 1 1/2 cup chicken broth, juice of 1 lemon and 1/2 tbsp of flour and let simmer for about 35 minutes
6. add in 6 tbsp butter, 1/4 cup sundried tomatoes, 1/4 cup capers and 1/3 cup heavy cream – mix & let simmer
7. add chicken back in and top with fresh cilantro
8. I pair ours with pasta – usually angel hair, but pasta whatever works that you have on hand. Enjoy!
