I have to admit that I have not been the biggest fan of celery. I often found the taste was too sharp, but I’m happy to report this Celery Salad is the perfect balance of tangy, fresh, and has a killer crisp to it! So easy to make with such simple ingredients.

- 2 Tbsp extra virgin olive oil
- 1 ½ Tbsp lemon juice
- 1/2 tsp sea salt
- 1/4 tsp ground black pepper
- 2 Tbsp fresh parsley
- 3–4 pitted medjool dates
- 1 ½ cups thinly sliced celery stalks
- 3 Tbsp chopped celery leaves
- 1 cup fresh mandarin orange slices
