Vegan One-Pan Tomato Soup
easy homemade tomato soup
- 1 onion
- 4 large tomatoes or a full container of cherry tomatoes
- 1 garlic head
- 3 bay leaves
- 3 fresh sprigs parsley
- 3 fresh sprigs thyme
- salt + pepper
- olive oil
- 1/4 cup coconut milk
- Preheat oven to 450f and drizzle the base of your square dish with olive oil.
- Transfer in chopped onion, garlic, all spices and large round tomatoes that are cut into 4(you can use small round tomatoes if you want). Top with a little more olive oil + salt and pepper and pop into the oven for 30 minutes.
- Once done remove all sprigs/bay leaves and the casing from garlic – transfer everything to blender, add in coconut milk and blend fully and serve immediately with whatever toppings you like!
