Vegan One-Pan Tomato Soup

  • 1 onion
  • 4 large tomatoes or a full container of cherry tomatoes
  • 1 garlic head
  • 3 bay leaves
  • 3 fresh sprigs parsley
  • 3 fresh sprigs thyme
  • salt + pepper
  • olive oil
  • 1/4 cup coconut milk


  • Preheat oven to 450f and drizzle the base of your square dish with olive oil.
  • Transfer in chopped onion, garlic, all spices and large round tomatoes that are cut into 4(you can use small round tomatoes if you want). Top with a little more olive oil + salt and pepper and pop into the oven for 30 minutes.
  • Once done remove all sprigs/bay leaves and the casing from garlic – transfer everything to blender, add in coconut milk and blend fully and serve immediately with whatever toppings you like!
