  • 15-20 fingerling potatoes
  • 1 tbsp avocado oil or olive oil
  • 1 tbsp chili onion crunch from Trader Joe’s
  • salt
  • pepper
  • oregano


  • Preheat oven 450F and line baking sheet with parchment paper
  • Toss potatoes in oil + seasonings then lay flat on baking sheet
  • Bake for 30-40 minutes and flip halfway through
  • Pair with pesto or any other homemade sauce/dip you love!
