Cranberry Orange Waffle

Immune boosting waffle – easy to make and absolutely delicious

Ingredients
  

  • 1 egg
  • 2 tbsp coconut oil
  • 2 tbsp maple syrup or honey
  • 1 cup all-purpose flour or you can sub in all-purpose gluten free flour
  • 1/2 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 cup unsweetened almond milk
  • 1/3 cup blueberries + dried cranberries
  • orange zest
  • a squeeze of fresh orange juice

Instructions
 

  • Mix all ingredients thoroughly and fold in the blueberries, cranberries and orange zest + juice last
  • Transfer to heated and greased waffle iron
  • Once done, remove and top with vanilla greek yogurt and more zest
  • Enjoy!
