whisk dry ingredients then pour in olive oil + warm water and mix until dough forms
I use a kitchen aid mixer with the dough hook but you can also just use your hands!
transfer dough to lightly floured surface and knead for about 1 minute.
cut dough ball into 12 equal sized pieces and shape each piece into a ball.
cover the balls with a clean kitchen towel and let them rest for 10 minutes.
heat a cast iron skillet over medium high heat. working with one ball of dough at a time on a lightly floured surface, roll it out into a 6 to 8-inch round tortillas
place on hot skillet for about 1 minute on each side! enjoy
