
Blueberry Lemon Baked Oat Cake
Ingredients
- 1¼ cup rolled oats
- 1¼ cup whole wheat flour
- 1½ tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 1 cup greek yogurt
- ¼ cup plant-based milk
- 2 large eggs
- 1½ tsp vanilla extract
- ½ cup honey
- 1½ cup blueberries
Instructions
- Preheat oven 350f and line 8×8 dish with parchment paper
- Whisky together dry and wet ingredients separately, then bring together
- Lastly fold in blueberries. Transfer batter to dish and bake for about 40-50 minutes or until toothpick comes out clean
- Cool for 15 minutes, cut and serve!
