One of my absolute favorite summer recipes to make: Greek Yogurt Blueberry Loaf!

Greek Yogurt Blueberry Loaf
Ingredients
- 2 cups whole wheat or unbleached all-purpose
- ⅓ cup coconut sugar or pure cane
- 1 tbsp baking powder
- ½ tsp salt
- ½ tsp cinnamon
- 1 cup greek yogurt
- ½ cup unsweetened almond milk
- 1 tsp vanilla extract
- 2 large pasture raised eggs
- ¼ cup honey
- ¼ cup coconut oil
- 1 – 2 cups fresh blueberries, washed
Instructions
- preheat oven 350F and line loaf pan with parchment paper
- Bring together dry ingredients and set aside
- Bring together wet ingredients then pour into the dry
- Lastly fold in the blueberries + transfer to loaf pan
- Let bake for about an hour or until toothpick comes out clean!
