
Chickpea ‘Tuna’ Salad
Ingredients
- 1 can organic chickpeas, drained-rinsed-mashed
- ½ red onion, finely chopped
- ½ tomato, finely chopped
- Handful fresh parsley, finely chopped
- Heaping scoop of mayo
- Salt + pepper to taste
- ¼ tsp paprika
- ¼ tsp garlic
Instructions
- Mix ingredients together and transfer on top of toast with avocado + more fresh parsley. Enjoy!
