One of my favorites from last year: Homemade Peppermint Patties✨

  • 2 +¼ cups  coconut shreds
  • 2 tbsp unsweetened almond milk
  • 2 tbsp coconut oil, melted
  • ¼ cup honey
  • ½ tsp peppermint extract
  • 1 cup dark chocolate chips


  • Mix together coconut shreds, almond milk, coconut oil, honey and peppermint extract in a blender (I used my vitamix)
  • Using a cookie scoop – transfer to baking sheet lined with parchment paper and place into the freezer for 10 minutes. It will be messy when trying to form the shape but once it freezes the mold will hold perfectly
  • Remove from freezer and coat in melted dark chocolate – I use two forks to let any excess chocolate drip off
  • Place back on tray and place into the fridge for 20 minutes. Remove and eat immediately or keep stored in an airtight container in the fridge. Enjoy!
