Ingredients
  

  • 1/2 cup unsweetened applesauce
  • 1/3 cup Almond milk
  • 1 tsp vanilla extract
  • 1 tbsp pure maple syrup
  • 1.5 cups old fashioned rolled oats
  • 2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • pinch salt

Mix-Ins

  • 1 cup shredded carrots
  • 1/4 cup walnuts, chopped
  • raisins

Instructions
 

  • Add all ingredients except for Mix-ins to the blender. Blend on high until smooth!
  • Fold in carrots, walnuts and raisins
  • Coat your pan or griddle with butter – once pan is hot add batter to the pan (whatever size you want!)
  • Cook both sides for about 2-4 minutes
  • Remove and top with cream cheese frosting or for a healthier alternative vanilla greek yogurt!
