Carrot Cake Pancakes
Ingredients
- 1/2 cup unsweetened applesauce
- 1/3 cup Almond milk
- 1 tsp vanilla extract
- 1 tbsp pure maple syrup
- 1.5 cups old fashioned rolled oats
- 2 tsp baking powder
- 1 tsp ground cinnamon
- 1/4 tsp nutmeg
- pinch salt
Mix-Ins
- 1 cup shredded carrots
- 1/4 cup walnuts, chopped
- raisins
Instructions
- Add all ingredients except for Mix-ins to the blender. Blend on high until smooth!
- Fold in carrots, walnuts and raisins
- Coat your pan or griddle with butter – once pan is hot add batter to the pan (whatever size you want!)
- Cook both sides for about 2-4 minutes
- Remove and top with cream cheese frosting or for a healthier alternative vanilla greek yogurt!
