Roasted Red Pepper Blender Soup
Easy and quick meal loaded with flavor
Ingredients
- 4 red bell peppers
- 1/2 yellow onion
- 2 containers cherry tomatoes
- 2 tbsp avocado oil
- 2 cloves garlic, minced
- 1.5 cup vegetable broth
- 1 tsp basil
- salt and pepper to taste
- 1 tbsp coconut milk optional for extra creaminess
- 1 tbsp Himalayan pink salt ghee
Instructions
- cover sheet pan with parchment paper and preheat oven to broil
- Slice peppers in half (remove stem and insides) and lay face down on the parchment paper
- Throw your tomatoes and roughly chopped onion onto the baking sheet as well
- Drizzle the avocado oil, salt, pepper and garlic
- Let everything broil for about 15 minutes or until peppers and cherry tomatoes begin to char
- Transfer all contents from baking sheet into high speed blender ( I use my vitamix) and set it to the soup function! Once full blended I like to add a scoop of full fat coconut milk for extra creaminess but thats optional and a scoop of 4th & heart ghee!
- blend again and enjoy!
