Roasted Red Pepper Blender Soup

  • 4 red bell peppers
  • 1/2 yellow onion
  • 2 containers cherry tomatoes
  • 2 tbsp avocado oil
  • 2 cloves garlic, minced
  • 1.5 cup vegetable broth
  • 1 tsp basil
  • salt and pepper to taste
  • 1 tbsp coconut milk optional for extra creaminess
  • 1 tbsp Himalayan pink salt ghee


  • cover sheet pan with parchment paper and preheat oven to broil
  • Slice peppers in half (remove stem and insides) and lay face down on the parchment paper
  • Throw your tomatoes and roughly chopped onion onto the baking sheet as well
  • Drizzle the avocado oil, salt, pepper and garlic
  • Let everything broil for about 15 minutes or until peppers and cherry tomatoes begin to char
  • Transfer all contents from baking sheet into high speed blender ( I use my vitamix) and set it to the soup function! Once full blended I like to add a scoop of full fat coconut milk for extra creaminess but thats optional and a scoop of 4th & heart ghee!
